It’s a natural that I would have buffalo meat recipes, because I actually raise bison in Kansas and sell bison meat through my website www.SmokyHillBisonCo.com.
Here’s my story of how I got involved in raising bison.
I’ve felt connected to “the land” since I was born. It comes from generations to ancestors that toiled the soil in Europe, and who traveled to Kansas in the 1800s. My family was drawn to find land that they could sustain a family with, and the freedom to do what they wanted with it.
My husband’s ancestry is a combination of that European dream and the Native American’s desire to live in conjunction with the land.
Our mission for the land is to evolve this once open prairie that had been plowed for crops, back to a grazing ecosystem again.
Plains bison roamed Kansas Plains for centuries before it was taken from them. Now they are back roaming again on private ranches and state parks.
These natives, nicknamed as buffalo, are wild creatures very attuned to their surroundings and us humans. We’ve learned to watch, respect, and give them the space to be themselves as a family herd as much as we can.
The bison provided food, shelter, and clothing for the Native Americans for centuries. They were part of their circle of life and ceremony.
Buffalo are now fulfilling that role again to sustain people with nutrition they have harvested from the sun and grass. By increasing their numbers, and using them in the circle of life, we can bring them back to “the land” again.
